Quick Spicy Chicken
I tried this “recipe” today. It literally took me 20 minutes for prep and cook, granted I let it simmer for another 10 minutes covered but with the burner off. Some of the ingredients may seem slightly off but keep in mind my last trip to Ranch 99 was a month ago.
Ingredients:
2 Chicken breasts - washed, patted dry, and cubed
2/3 cup soy sauce - use the full sodium one for this to not have to add more salt later
3 tablespoons vinegar - I wanted to use rice wine but only had balsamic, so that went in.
1 teaspoon red chili paste dealio. I dubbed it the man-woman sauce. Here’s the link to what I use: chili sauce - want a spicier recipe? Use more of this Chili sauce.
black pepper to taste
1 teaspoon of crushed ginger
1 teaspoon of crushed and roughly chopped garlic
1/4 of a large yellow onion - washed, finely chopped. (I think it ended up being about 1/3 cup)
2 tablespoons sesame seeds - I really wanted to add a dash of sesame oil, but didn’t have any. I’m sure it can’t hurt! + More sesame goodness to garnish!
Chopped scallions, if you have them, for pretty color on the plate.
Mix ALL of the above together and let sit for 5 minutes. Meanwhile go make your rice, noodles, or whatever you eat chicken with. Now heat up some oil (I used olive oil because it HAD to be used up, lesson: never buy costco olive oil if you cook just for yourself). Just a dash of oil, you’re not frying the chicken just sauteeing it. Throw in the chick mixture into the hot pan and stir continuously. After about 7 minutes the chicken should be mostly cooked. Lid the pan, turn of the burner and let the residual heat continue to simmer it. (I think with a gas range, you’ll have to keep the gas on a “warming” setting).
